Rice and soy milk ice cream

Rice and milk (Arroz con leche) is a popular dessert from Spain. Now you can eat a delicious ice cream made with it!
Ingredients
- 250 g rice
- 500 ml soy milk
- 1 cinnamon stick
- 1/2 lemon peel
- 8 tablespoon sugar
- 1 tablespoon vanilla
- 100 ml soy cream for cooking
- chocolate syrup
- 8 raspberries
- 8 chocolate wafers (no eggs or milk)
Method
Cook rice in boiling water 5 minutes. Take out, drain and boil with the soy milk, vanilla, sugar, cinnamon and lemon peel. When boiling, lower heat to medium and cook 15 minutes stirring. Add soy cream and cook 5 more minutes.
Take out, remove lemon peel and cinnamon and mix with a blender until smooth and thick. Pour on ice cream molds or cups and let freeze at least 2 hours.
Serve with chocolate syrup, raspberries and chocolate wafers.
Tip: to remove well molds, you can grease them lightly with vegetable margarine. Then, when ready to eat, pass a knife by the edges to break the vacuum.
