Beans on toast
Ingredients
- 1 can of baked beans,
- toast,
- olive oil,
- one red pepper,
- one white onion,
- fresh garlic
- some diced tomatoes,
- crushed red hot pepper flakes,
- and perhaps a jalepeno pepper, if desired
Method
Sautee the chopped red pepper, onion, garlic and jalepenos in a pan. After a few minutes add the diced tomatoes (chopped) and the beans, along with the hot red pepper. Get the toast going in a toaster oven with a little olive oil drizzled on top.
When the toast is crisp and hot, pour the beans and vegetables from the pan on top of the toast (best if it is piled high and spilling over onto the plate).
