Summary

The "frituras de pescado" -deep-fried fish dishes- are very popular in the seaside towns of the South of Spain in summer. At home, we usually cook fresh anchovies, baby squids and marinated dogfish and serve them with a big bowl of salad.

Ingredients

  • 3 slices of dogfish -cut them into bite size pieces
  • 1 lemon -only the juice
  • 2 tbsp paprika
  • 1 clove of garlic -crushed
  • olive oil
  • a handful of parsley -minced
  • salt -to taste
  • flour

Method

1.- Mix lemon juice, a trickle of olive oil, garlic, papika, parsley and salt in a bowl.
2.- Put the dogfish into the marinade and let it rest in the fridge for at least 6 hours.
3.- Heat oil to 180ÂșC in a deep frying pan.
4.- Flour the pieces of dogfish -carefully remove the excess of flour.
5.- Fry them until golden brown -don't worry, they'll be succulent inside.
6.- Let them rest for a while on a piece of kitchen paper, so it'll absorb the excess of oil.
7.- Serve hot with a big bowl of salad.

OH MY GOD! So sorry! I said it in French: I meant parsley ^^U. I'm correcting it right now. We don't want anyone to get poisoned. Thanks a lot for pointing it out!!! :) I hope you'll like it :) -yep, I think it'll better without washing powder ;).

Great recipe. My husband went sea fishing last Saturday and caught loads of Dogfish. I wasn't sure what to do with it - but now I am. . Thanks, will certainly try your recipe. Incidentally, what is persil? In England, that is a washing powder!!
