Spicy Chickpea Medley
Summary
Lovely barbecue dish, yummy in the summer with hummus and pitta bread
Ingredients
- 600 grams of chickpeas
- 1 chopped pepper
- 1 red onion thinly sliced
- Juice of 1 lemon
- 1/2 bunch of chopped fresh coriander
- 1/2 chopped fresh chilli
- Olive oil for seasoning
- Salt and Pepper for seasoning
Method
1. Add chick peas to the bowl
2. Stir in the onion, pepper, coriander and chilli
3. Mix in the lemon juice, olive oil and salt and pepper
