Lemon Cheese

Ingredients
- 2 eggs
- 6 oz castor sugar
- 3 oz butter
- 2 lemons
Method
Melt butter in a saucepan
Add sugar, lemon rind and juice
Slightly beat the eggs and mix in
Stir over a low heat - or in a basin over hot water - until
the mixture begins to thicken. Mixture must not boil.
Pour into jars when cool
NB: Do not use the white of the lemon rind as this will make it bitter
