Welshman's Cottage Pie
Summary
Can be prepared in advance and kept overnight in the fridge
Cook in the oven at the same temperature but for 40 mins
Ingredients
- 1 lb potatoes, peeled and cut into small pieces
- 8 oz leeks, chopped
- 450 g (1lb) minced lamb
- 1 onion, finely chopped
- 300 ml (1/2pt stock)
- 200 g canned, chopped tomatoes
Method
Preheat oven to 200C/400F/gas mark 6
Boil the potatoes until almost cooked. Add the leeks and cook until soft.
Drain and mash the potatoes and leeks
Dry fry the minced lamb and add the onion. Cook for 5 minutes
Add the stock and tomatoes and transfer to a large ovenproof dish
Top with leek and potato mixture and cook in oven for 35 mins until the top is brown and crispy
TIP; add a tsp curry powder to add extra kick
