Ingredients
- 2 .5lb old potatoes, peeled and sliced
- 3 onions, sliced very thinly
- 2 cups leftover roast meat (optional)
- 3 oz butter
- salt, black pepper and freshly grated nutmeg
- snipped chives to garnsih
Method
Heat the oven to 150C/300F/Gas 2
Melt 2 oz of the butter in a 4 pint/8 cup capacity flameproof casserole dish.
Add the onion and cook gently until pale in colour
Remove casserole from the oven and transfer the onion onto a plate.
Arrange the potato and onion in alternating layers in the casserole dish, seasoning each layer well with salt, pepper and nutmeg. Add 3-4 tbsp water.
Add left over meat (optional).
Dot the top with remaining butter and cover dish with a tightly fitting lid and cook in the oven for 2-2.5 hours, removing lid for the last hour to allow top to brown well.
Garnish with snipped chives.
