An excellent acconpaniment for Curry dishes
Ingredients

8 cm (3.5 inches) cucumber, halved, deseeded and diced finely
- 2 spring onions, chopped finely
- 2 tsp lemon juice

1 tsp mint sauce ( alternatively, chopped fresh mint)
- 125 g tub of low fat plain yoghert
- salt and pepper
Method
Mix all the ingredients together and serve.
