Brie and Courgette Soup

Summary

Low fat. Can substitute for Mozzarella but would have higher fat content. Can be frozen

Ingredients

  • 200g ( 7 oz ) Potatoes, peeled and diced
  • 300g (10 oz ) courgettes, halved lengthways and sliced.
  • 150g (6 oz ) leek, halved lengthways and sliced
  • 850 ml (1.5 pints) vegetable stock
  • 1/2 tsp dried thyme
  • 135 g ( 5oz) Brie cheese, rind removed, diced
  • Black pepper

Method

Put all ingredients except brie into a large saucepan

Bring to the boil, cover and simmer for 10-15 minutes, until the vegetables are tender

Add the brie and stir until the cheese melts - do not overcook at this stage, this should only take 1-2 minutes.

Liquidise, season with black pepper and serve.
