Garlic chicken and coriander

Goes well with home made pesto and penne
Ingredients
- 1 kilo of chicken breasts
- A bunch of coriander
- 2 cloves of garlic
- A few peppercorns
- Salt
- 1 onion chopped
- Olive oil
- Fava beans
- Dried rosemary
- Dried thyme
- 6 chestnut mushrooms
- 1 green pepper
Method
Cut the chicken breasts into 1cm chunks.
Chop the garlic, onion & coriander and marinate with the chicken. Add oil and the peppercorns, rosemary, thyme and a pinch of salt. Leave for 2 hours
Heat the oil in the pan and cook the contents of the marinade until the chicken is browned. Chop the mushrooms, green pepper and fava beans.
Simmer for 40 minutes. Serve with sweet potato, pasta or rice
