Tuna Curry
Summary
This is a very easy lunch dish. Vary the amounts of curry powder to your taste.
Ingredients
- I Large Can Tuna
- 1 tbs Olive Oil
- 3/4 pt milk
- 1 medium Onion
- 2 tsp curry powder
- Clove Garlic
- 1 tbsp Cornflour
- Basmati Rice
Method
Put pan on to boil for rice (enough for 2) and cook in usual way.
Meanwhile, whilst rice is cooking.........................
Peel Onion and garlic and chop
Add to Olive Oil and fry in pan until soft.
Drain Tuna and add to onion/garlic
Turn heat down and add curry powder; stir until mixed in
Gradually add milk stirring all the time
Simmer for 10 mins
Mix cornflour in a cup with water until thick
Add to pan and stir in until sauce thickens
The rice will be cooked by this time - serve with Mango Chutney
