The real tiramisu
Summary
Make them in about 20 minutes then chill then for 2 hours
Ingredients
- 3 egg yolks
- 75 g/3oz caster sugar
- 4 tbsp coffee liqueur
- 2 x 250g(9oz) tubs mascarpone cheese
- 200 ml (7fl oz) strong coffee or espresso
- 14 sponge finger biscuits
- 25 g (1oz) plain chocolate, finely grated
- 150 g (5½ oz) chocolate covered coffee beans
Method
Beat egg yolks and caster sugar together until pale then add mascarpone and whisk. Add 1 tbsp of the coffee liqueur and whisk gently.
In a separate bowl, mix the coffee and remaining coffee liqueur.
Dip half the biscuits into the coffee mixture place in the bottom of 4 glass coffee cups or small bowls.
Spoon over half the mascarpone mix and sprinkle with half the chocolate covered coffee beans. Repeat with another layer of biscuits, mascarpone and chocolate.
Cover and refrigerate for 2 hours and dust with chocolate covered coffee beans before serving.
