Awesome Prawn Curry in 15 Minutes
Summary
I made this for my brother on a recent trip back to the UK, and it was so good he started crying
Ingredients
- Big glug of olive oil
- 1 onion, chopped
- 3 cloves garlic, chopped
- 1 teaspoon chilli flakes
- A good heap (5-10 teaspoons ) curry powder
- A dozen or so fresh curry leaves
- 1 can chopped tomato
- 1 small can coconut milk
- Sea salt and ground black pepper
- Big handful of prawns, shelled and deveined
- 1 tablespoon runny honey
Method
You want a big pan for this - a wok is perfect. Heat oil in the pan over a medium heat. When hot, add the onion, garlic and chilli flakes and fry for 2 mins. Add curry powder and curry leaves, give a good stir and cook for 30 seconds (the mixture will be dry at this point; be careful not to let it burn). Add the canned tomatoes and the coconut milk, stir and bring up to a simmer. Season well with salt and pepper. Adjust the heat so it is gently simmering, add the prawns and honey, and stir well. Once the prawns are cooked through it's ready.
Optional extra: a cup of cooked peas, stirred in right at the end, tastes great and adds colour interest.
