Ingredients

  • 1 pack of lasagne sheets (or you can make your own)
  • 1 packet
  • Olive oil
  • 2 onions
  • 3 beef tomatoes
  • 1 or 2 green peppers
  • 12 mushrooms (best to use chestnut ones)
  • 1 small can of tomato puree
  • Sun dried tomato paste
  • 2 or 3 cloves garlic
  • / Oregano (to taste)
  • Black pepper
  • 1 teaspoon sugar
  • Milk
  • Plain Flour
  • Mature cheddar
  • Butter

Method

Cook the beef in a little olive oil until browned. Add the chopped onions - when these are beginning to brown, add the mushrooms, tomatoes, peppers, canned tomatoes, herbs, sugar, pepper and herbs (leave the garlic until it's been simmering for about 10-15 mins). Leave it on low heat for anything between 15-40 mins (keep checking on it)

Whilst this is cooking, make your cheese sauce. To do this you'll need a large blob (2 tablespoons) of butter/margerine and heat this up in a pan. As soon as it begins to melt, add a tablespoon of flour until it has formed a thick paste (make sure it's not too runny but it should all be one 'blob' of 'putty'). Slowly add milk and stir all the time. Keep adding the milk and stirring until you end up with a sauce like consistency. At this point you can start adding grated cheese and pepper....you can use any cheese but mature cheddar works fine.

Take a large dish and start adding in the tomato mixture. Layer with sheets of lasagne, then do a layer of cheese sauce. Keep doing this until you have filled the dish. Finish with a sprinkling of cheese so it goes nicely brown in the oven. (cook for about 40 mins at 180C but check after 30 to see how it's doing)

Hmmm lasagne's quite a complicated dish for someone who burnt cornflake cakes. =)
