Jam Roly-Poly

Ingredients
- 8 oz Self Raising Flour
- 4 oz Grated Suet Pinch Salt
- 10 oz Raspberry or Blueberry Jam
Method
Mix the flour, suet and salt in a bowl, then stir in with the blade
of a knife Add enough water to bind the mixture to a light dough
Roll it out to an oblong shape to a thickness of about 1/4 inch
Spread the center lavishly with Jam leaving a margin of 1 inch at
the sides and one end Roll up loosely starting from the jammy end
Enclose it in a loose parcel of foil; it should have pleats in it so
that it can expand with the roly poly; this helps to keep the pudding
light Fill the bottom half of a large steamer with water and bring to boil
Put the pudding roll in the top over the boiling water
Cover the pan and steam for 2 hours, top with more boiling water as
required
